酿制葡萄酒,如果温度合适,一般十几天就能够充分发酵,发酵过程会有大量气泡产生,持续一周时间发酵现象就会逐渐减弱。如果气温低(低于三十度)可以多发酵几天。里面没有很多气泡再生成时,就需要及时过滤皮渣,过滤后的葡萄酒,暂时不能装瓶储存,还需要再经过二次发酵的过程,待酒液澄清后装瓶保存。
需要注意的是,发酵时间越长酒味越浓;葡萄酒酿好以后,放的时间越长,酒味越浓。葡萄酒酿好以后,要把葡萄籽,葡萄皮,还有发酵后残余的果肉都过滤掉。滤渣时用干净的纱布过滤就可以,滤渣的工具一定要严格消毒,不能用铁质、铜质等工具,不能接触不洁用具,避免带入细菌导致葡萄酒二次感染变质。本回答被提问者采纳
