凤凰三点头:“凤凰三点头”是茶艺道中的一种传统礼仪,是对客人表示敬意,同时也表达了对茶的敬意。是泡茶技和艺结合的典型,是多用于冲泡绿茶、红茶、黄茶、白茶中高档茶的冲泡技法。寓意:凤凰三点头寓意三鞠躬,表达主人对客人有敬意之心。
具体操作为:轻提手腕,手肘与手腕平,使手腕柔软有余地。高提水壶,让水直泻而下,接着利用手腕的力量,上下提拉注水,反复三次,让茶叶在水中翻动。水声三响三轻、水线三粗三细、水流三高三低、壶流三起三落。至于手腕柔软之中还需有控制力,才能达到同响同轻、同粗同细、同高同低、同起同落而显示手法精到。这一冲泡手法,雅称凤凰三点头。
